For chicken kofta curry dish it is a two part process
First Part - make chicken koftas - the recipe uses 9 koftas if you want to cook all double the curry making spices
Second Part - make the curry
For the first part grate almonds and chick peas in a food processor and set aside
Grate onion in the food processor
Add chicken, grated almonds and chick peas flour and cilantro and grate well till a thick mixture is formed
Add chilli pepper, nutmeg, salt and poppy seeds to the mixture and mix well
Make golf size meat balls or koftas and put in fridge.
For curry making blend onion, garlic cloves, ginger and all spices except cloves and cardimom, add 1/2 cup of warm water and blend well
Heat cooking oil in a pot and add the spice mix
Cook down the spice mix till the mixture turns grainy
Add meat balls or kofta gently to the pot one at a time
Pour the whisked yogurt on the koftas
Cook on medium heat till the yogurt is fully cooked and you do not see whiteness of yogurt
Do not use spoon to stir the pot, shake the pot from side to side to ensure that the masala and koftas do not stick to the bottom
When the masala is cooked add 1 1/2 cup of boilde water to the pot and cook on high heat till it comes to a boil reduce heat and continue cooking till the koftas are cooked and the water is reduced
Cook down the water depending upon your liking of the thickness of the curry
Remove and serve hot, garnish with cilantro before serving. Enjoy
