Egg Curry
Egg curry is a very simple and delicious dish. This is kids delight, easy and quick to make and you would have most of the ingredients in your pantry and fridge.
Preparation Time: 5 minutes
Cooking Time: 30 minutes
Serving: 3 persons
Ingredients
Eggs 3
Tomatoes 3
Red potatoes 4
Green chillies 2
Onion 1/4
Cooking oil 3 Table spoon
Salt 1 teas spoon
Turmeric 1/2 tea spoon
Corainder powder 2 tea spoon
Chilli powder 1 tea spoon
Cumin powder 1/2 tea spoon
Water 1 1/2 cup
 
Method
  • Boil eggs in a pot, when the water boil turn the heat to low and let it simmer for 6 minutes
  • Thinly slice onions and fry in oil till golden brown, remove fried onions leaving the oil in the pot
  • Chop tomatoes and add these to the blender
  • Also add fried onions to the blender and blend to make a smoothy
  • Peel the potatoes and cut into small pieces
  • Add all spices to the oil and cook it adding 1/2 cup of water
  • Cook down the water till the oil seperates
  • Add the smoothy and again cook it down till the oil separates and your masala turns grainy
  • Peel the cooled eggs and cut into two pieces each
  • Add the potatoes to the pot and fry these for one minute add a cup of boiling water
  • If using the pressure cooker, close the lid, cook on high heat till the pressure builds, once the pressure builds turn the heat to medium and cook for five minutes
  • If not using a pressure cooker cook till the potatoes are cooked and water has been reduced
  • Add peeled and halfed eggs to the pot cook for another minute and your egg curry is ready to be served
  • Garnish with cilantro before serving
