Mutton Biryani
Biryani is cooked in many different ways. This is a mild version of biryani. I have tried to make it simple and easy without loosing the great taste. Try it and you will love it.
Preparation Time: 60 minutes
Cooking Time: 60 minutes
Serving: 3 persons
Ingredients
Mutton or lamb pieces 1/2 pound
Long grain basmati rice 1 cup soaked for an hour
Onion 1/4
Bay leaf 1 dry
Cinamon stick 1 medium
Cloves 6
Green Cardimom 6
Black Cardimom 2
Yogurt 1 cup
Finely chopped Ginger 2 teaspoon
Finely chopped garlic 2 teaspoon
Cooking oil or ghee 2 table spoon
Saffron 1 pich soaked in water
Salt 1 teaspoon
 
Method
  • Heat oil in a pot and fry onions till golden brown
  • Add meat and ginger garlic and fry the meat for a minute or so
  • Add all the dry spices while frying the meat, make sure that the meat does not stick to the bottom.  Keep on stirring well
  • Add yogurt to the pot and cook down the yogurt till the oil seperates
  • Add one cup of water cover the lid.  If cooking in a pressure cooker cook on high heat till the pressure builds, simmer for twenty minutes or the time it takes for the meat to be tender.  If not using a pressure cooke cook till the meat is tender
  • Take another pot and boil rice in the pot.  When the pot come to full boil drain the rice out and let it rest
  • Take a oven proof dish and spread on layer of rice at the bottom.  Sprinkle saffron around
  • Take the cooked meat - make sure it is tender and spread it on the layer of rice
  • Cover the meat with another layer of rice.  Add the remaining sffron. Repeat the process if cooking more
  • Cover the dish with a foil and transfer to a preheated oven
  • Cook for 30 minutes at 200 degrees
  • Remove from the oven, remove the foil, mix it well so that all the masala from the meat and rice get mixed well
  • Serve hot.  Enjoy
