Take the egg plant and cut thin slices - depending on the size of egg plant you may only need 1/3 - cut about 20 slices.
In a bowl mix red chilli pepper, turmeric and salt well
Coat each egg plan slice on both sides with this spice mix and set aside
In a frying pan add oil and on medium heat fry the coated slces of egg plant
Fry for 3 minutes on one side and another 2 minutes on the other side
Mix sugar and a pinch of salt to the yogurt in a big plate
Dip the fried egg plant slices in the yogurt
Fry the pinch of cumin seeds in the cooked oil from egg plants
And pour in the hot oil and cumin seeds over the raita - be careful not to splash over due to hot and cold.
Add a few mint leaves and enjoy as side dish with Biryani, Rice, Pillaf or use it as a dip.
